Healthy Breakfast Muffins

We start healthy into the day and treat ourselves to breakfast with these delicious muffins, which are prepared without refined sugar. With fruity raspberries and pungent oatmeal still a real treat.

Ingredients for 12-15 cupcakes

300 g wheat wholemeal flour

3 teaspoons baking powder

100g raw sugar

2 tablespoons honey

1 egg

300 ml buttermilk

80 ml of vegetable oil

1 tsp vanilla extract

160 g raspberries

45 g of oatmeal

Preparation:

Preheat oven to 180 °C. Mix honey, egg, buttermilk, oil and vanilla extract. Mix flour with baking powder and raw sugar and fold in gently. Carefully add  raspberries and oatmeal.

Cut Blechrein Black  into 12 x 12 cm squares. Press squares well into a muffin tin and pour in the dough.

Sprinkle muffins with some oatmeal and bake for about 20 minutes.
