Mediterranean Tomato Quiche
With this delicious Mediterranean Tomato Quiche we are able to taste the summer on our plates while dreaming of our next holidays.
1 roll of puff pastry
1-2 tbsp hot mustard
150 g of grated Emmentaler
20 cherry tomatoes
250 ml of cream
1 tsp Italian herbs
Preheat the oven to 200 °C.
Lay out a rectangular baking tin with Blechrein Nature. Roll out the puff pastry on the baking paper, pull up the edges and press firmly.
Brush the puff pastry with mustard. Whisk the eggs with cream. Add the grated cheese and season well with salt, pepper and herbs.
Pour the egg mixture on the puff pastry and cover with the tomatoes.
Bake the quiche for about 25 minutes until golden brown.
Enjoy hot or cold.
