Sweet Puff Pastry Baskets

Puff pastry baskets -  a simple, yet sophisticated treat for your Sunday coffee. The crispy puff pastry treats hide a fruity creamy filling of delicious blackberries and fresh quark inside.

Ingredients for 12 pieces:

350g puff pastry

1 tsp cornstarch

150 g blackberries

2 eggs

80 g of sugar

400 g of low-fat quark

2 teaspoons lemon juice

200 ml whole milk 3.5% fat

1 packet of vanilla pudding

100 g of butter

Preparation:

Preheat the oven to 180 °C.

Puree blackberries, 1 tablespoon sugar and starch. Mix the yolks, sugar, cottage cheese and lemon juice. Then stir in custard powder and milk.

Roll out the puff pastry into a rectangle, cut out 12 squares (approx. 11 x 11 cm) and place them in the moulds of a muffin tin.

Beat the egg whites until stiff and melt the butter. First, fold the egg whites and then the butter under the quark.

In each "basket", alternately add 2 tablespoons of quark mass and 1 teaspoon puree (two of each).    

Bake puff pastry baskets for 30-35 minutes and decorate with berries.
