These delicious almond moons with white chocolate and almond shards will not last long, as you just can’t get enough of them. So you better double the recipe right away.
Ingredients for about 40-50 pieces:
1 egg white
140 g of powdered sugar
200 g of ground almonds
Juice 1/2 organic lemon
100 g white chocolate
50 g chopped almonds
Beat the egg whites until fluffy and stir in the powdered sugar, lemon juice and ground almonds.
Wrap the dough in cling film and chill for at least 1 hour.
Roll out the dough on a floured surface and cut out moons with a cookie cutter.
Place the moons on a baking tray lined with Blechrein Winter and bake at 180 ° C for approx. 5-6 minutes, so that the dough feels soft and moist.
Melt white chocolate over a water bath and paint on cookies. Sprinkle with chopped almonds and leave to dry.
