Oven Baked Zucchini Feta Cakes
Light and delicious zucchini feta cakes, which are much healthier thanks to the preparation in the oven. Our Blechrein Slim helps to absorb the excess liquid of the zucchini, so that these delicious little cakes look and taste just perfectly.
Ingredients for 6 cakes:
1 small clove of garlic
6 basil leaves
150 g of Feta cheese
1 slice of whole wheat sandwich toast
1 teaspoon baking powder
150 g of Greek yogurt
Juice ½ lemon
1 handful of mint leaves
- Finely grate the zucchini, season with salt and let rest for about 15 minutes. Then press out the excess liquid.
- Chop the garlic clove and basil and place them in a bowl with the grated zucchini. Whisk and add the egg. Crumble the feta cheese and sandwich toast and stir in. Season with pepper and salt.
- Preheat the oven to 200 °C. From the mass, form 6 round little cakes and place on a baking sheet lined with Blechrein Slim. Bake for about 20-25 minutes.
- In the meantime finely chop mint and mix with the yoghurt and the lemon juice. Season with pepper and salt.
Serve the zucchini with the dip.
